This salad goes viral every few months for a reason! It's an essential for anyone on the hormone healing journey - I've been having it a few times a week for years now and it's worked wonders.
It's origin is traced back to Dr. Ray Peat, a renowned biologist with expertise in hormone physiology. While this salad has existed in many different forms all over the world for generations, his research revealed that raw carrots possess a distinctive fiber that has a remarkable ability to:
1) Safely detox and remove excess estrogen
Excess estrogen (often called estrogen dominance) is one of the most common hormone imbalances which expresses itself in a variety of symptoms such as painful or heavy periods, cramps, PMS, acne, weight gain, headaches, etc. Raw carrot's unique fiber effectively binds to excess estrogen in our intestines and helps to safely eliminate it!
2) Safely eliminate endotoxins
Just like with estrogen, this unique fiber is also effective at binding and safely eliminating endotoxins - inflammatory bacterial toxins that are often accompanied intestinal permeability (leaky gut) and associated with hormonal imbalance.
Other benefits include: boosting digestion, supporting optimal liver health, promoting gut health and thyroid function.

INGREDIENTS
* Raw Carrot
* Olive oil
* Apple cider vinegar
* Seat salt
* Honey (opitonal)
METHOD
Prepping the Carrots: If they're organic, retaining the skin can provide an extra nutrient boost. However, if you're concerned about pesticides that can disrupt your hormonal balance, it's better to peel them entirely.
Retaining the Beneficial Fibers: This is a crucial step. Peel the carrots lengthways. Why? It's all about those long, beneficial fibers. They play a key role in binding to excess estrogen and endotoxins, escorting them out of your system. Cooking or juicing the carrots can destroy these vital fibers, so keep it raw for maximum benefit.
Enhancing the Effect: Add a mix of saturated fat from olive oil and the acetic acid found in apple cider vinegar. This combination enhances the germicidal effect of the carrot fibers, maximising their detox properties. To finish it off, add a sprinkle of sea salt which contains trace minerals important for thyroid function.
Flavour boost: If you're looking for a touch of sweetness, feel free to add some honey.
HOW TO CONSUME IT
Personally I like to enjoy it as an “appetiser” before dinner as it's said to work best on an empty stomach. Or, I add a bunch of yummy ingredients to it like jammy eggs, cucumber, avocado, herbs etc.) to make a big lunch salad.
